Implementing LIDO’s new concept in Apollo Plaza was logistically and technically challenging. It wasn’t just a refresh of the customer area, but the construction of a full-scale catering kitchen in the middle of one of Tallinn’s busiest centers.

The project was complicated by the large-scale integration of kitchen technology into the existing building. Ventilation, grease traps and water systems had to work flawlessly without disrupting the rhythm of life in the rest of the building. The result is a 160-seat catering area where, in addition to the capacity of the catering kitchen, the entire atmosphere is inviting and cozy.

Challenge: Building a large-scale and technically demanding catering kitchen in limited conditions to serve thousands of customers a day.
